Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions
 

  • Prepare the Dough
    In a large mixing bowl, cream together the softened butter and sugar until the mixture becomes pale and fluffy, ensuring a smooth and well-blended base.
    Mix in the egg yolk and vanilla extract, blending thoroughly until the mixture is smooth and all the ingredients are fully incorporated.
    Slowly incorporate the flour and salt into the mixture, stirring gently until the dough forms and comes together into a smooth consistency.
  • Shape the Cookies
    Shape the dough into a smooth ball, then wrap it tightly in plastic wrap. Place it in the refrigerator to chill for at least 30 minutes, allowing it to firm up for easier handling.
    Set your oven to preheat at 350°F (175°C). While the oven warms up, line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
    Lightly dust your work surface with flour to prevent sticking, and roll out the chilled dough to an even thickness of about 1/4 inch. This ensures uniform baking and a perfect texture.
  • Cut Out Shapes
    Using a heart-shaped cookie cutter, press firmly into the rolled-out dough to create evenly shaped cookies. Gather any scraps, re-roll the dough, and continue cutting until all the dough is used.
    For half of the cookies, cut a smaller heart shape out of the center to create a “window.”
  • Bake
    Place the shaped cookies on the prepared baking sheet, ensuring they are spaced about 1 inch apart to allow room for spreading while baking.
    Bake the cookies for 8–10 minutes, or until the edges turn a light golden brown. Once done, transfer them to a wire rack to cool completely before serving or decorating.
  • Assemble
    Spread a small amount of jam onto the base cookies.
    Top with the cookies that have the heart-shaped cutout, gently pressing to sandwich them together.
    Dust with powdered sugar if desired.
